

After the harvest all vegetables continue ripening due to the effect of the volatile substances released by them. One of these volatile substances is ethylene gas, which is considered as a plant maturing hormone and responsible for the physiological and biochemical changes during the handling, storage and/or transport.
By removing the ethylene gas during the postharvest phase the organoleptic properties of the vegetables can be preserved for a longer time period.
